These meatball sub sandwiches are a super-easy, low-effort crowd-pleaser. Meatballs, marinara sauce, cheese, and hoagie rolls—that’s it! Perfect for a first-night dinner at camp or an easy hot lunch.
Ingredients
Meatballs
1lbground beef
½cupparmesan cheesegrated
½cuppanko breadcrumbs
1egg
3garlic clovesminced
1shallotminced
½tspsalt
Sandwiches
2cupsmarinara sauce(either ½ of a 25oz jar, or a full 14 oz jar will work)
4hoagie rollssub rolls or even hot dog buns also work
4slicesprovalone cheese
½cupparmesan cheesegrated
Instructions
Meatball Recipe (Make Ahead)
Combine the ground beef, parmesan cheese, panko, egg, minced garlic, minced shallot, and salt together in a bowl.
1 lb ground beef, ½ cup parmesan cheese, ½ cup panko breadcrumbs, 1 egg, 3 garlic cloves, 1 shallot, ½ tsp salt
Roll into 1” balls and place on a lightly greased baking sheet
Place in the oven on top rack. Broil on high for 7-10 minutes. Until the internal temperature reaches 160°F and the exterior is browned.
Remove from oven. Allow to cool. Transfer to a resealable container and place in the freezer.
At Camp
Add the meatballs and sauce to a pot or skillet. Bring to a simmer and cover for 5 minutes. If the meatballs are large, consider breaking them in half with a spatula.

Optional: Toast the hoagie rolls.

Place the sliced cheese in the buns and then place the meatballs and sauce on top. Sprinkle with grated parmesan.
